Q: “What type of cattle and how old are they at slaughter?”
Answer: They are Black Angus and typically 14 months of age at slaughter.
Q: “How long is each animal grain fed?”
Answer: A minimum of 120 days.
Q: “Does the meat come vacuum packed?”
Answer: Yes, it does!! As well as marked by the cut of meat and weight. However, ground meat is packaged in tube form and in 1 lb. increments. Note, if you decide to have patties made, they are vacuum packed typically 4 per package.
Q: “Do I get 100% of the hanging weight in finished product?”
Answer: No, there is a 10% loss in water weight while the beef is being aged. There is also an additional 10% loss in trimming and deboning. The way that you decide to have your beef custom cut plays a factor in that additional 10% loss during the trimming and deboning process.
